ABOUT SILVI COFFEE

 

Founded by Nat Paolone (originally from Canada with Italian roots), SILVI COFFEE is one of Ho Chi Minh City’s most comprehensive roasting and coffee-training companies.

While traveling in Australia, he saw an ad for a barista at a cafe in Sydney back in 2004. With no coffee experience, this cafe became a pioneering boutique coffee roastery which became famous nation-wide for quality coffee and world champion baristas. 

From the first sip, the impossible complexity of exotic flavors rushed in, the coffee journey began. Striving to achieve these flavors and more, with every espresso shot. 

From the nuances of the barista, then trainer, three years later Vietnam became the unplanned destination. Training thousands of baristas in Vietnam, Silvi was founded on the determination of growing the local coffee scene, seeking to help create a quality coffee culture in Vietnam. 

Nat volunteers annually as a judge for Vietnam National Barista Championship (VNBC) where local champions go on to vie for higher accolades at the World Barista Championship (WBC).

Silvi Coffee works closely with Vietnamese coffee farmers including Lieng Hót K'tâm and Cil Sommy Pat at their Arabica farm in Dalat while engaging a greater audience with Fine Robusta from Mr Danh’s farm in Dak Mil province—coffees that are strong-bodied and boast pleasing acidity thanks to the fertile volcanic soils of the Central Highlands. 

These delicious local beans form the backbone of Silvi Coffee’s roasted coffee line-up along with Italian-style blends and single-origin beans from all around the world.

Ultimately, Silvi Coffee strives to grow hand-in-hand with Vietnamese specialty coffee and espresso art.
